Preparation

  • Gather all your ingredients. Ensure your chicken breasts are thawed if they were frozen, and chop the onion and bell pepper. Mince the garlic cloves, and have your olive oil, paprika, salt, and pepper ready for use.

Cooking the Base

  • Heat olive oil in a large pan over medium heat. Add the chopped onion and minced garlic, sautéing until the onions become soft and translucent, about 3-4 minutes.

Browning the Chicken

  • Add the chicken breasts to the pan. Cook each side for approximately 5-7 minutes or until they are golden brown.

Adding Vegetables

  • Stir in the sliced bell pepper and paprika. Cook together for another 2-3 minutes.

Incorporating Coconut Milk

  • Pour in the can of coconut milk, stirring everything together until the chicken is well coated.

Seasoning

  • Season your dish with salt and pepper to taste.

Simmering

  • Reduce the heat to low, cover the pan, and let everything simmer for about 20 minutes.

Checking Doneness

  • Check the chicken for doneness, ensuring it has reached an internal temperature of 165°F (75°C).

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Can be reheated on the stove or microwave. For added flavor, consider marinating the chicken beforehand.
