  • 1 piece everything bagel
  • 2 large eggs whisked with a pinch of salt
  • 2 slices cheddar cheese or cheese of your choice
  • 3 slices bacon crispy, cooked to preference

Optional Ingredients

  • 1 tablespoon chopped chives for garnishing
  • 1 teaspoon butter optional for cooking eggs and toasting bagel

Preparation

  • Gather and prep all your ingredients. Slice the everything bagel in half, crack the eggs into a bowl, and whisk them with a pinch of salt. Chop the chives and set them aside.
  • Place the bacon slices in a cold skillet. Cook them over medium heat until crispy and golden brown, about 8-10 minutes. Once done, transfer to a paper towel-lined plate.

Cooking

  • In a separate nonstick pan, melt the butter over medium-low heat. Pour in the whisked eggs and gently stir. Cook until just set but still soft, around 3-5 minutes.
  • While the eggs are cooking, toast the bagel halves until golden brown. Optionally, spread a little butter on the insides for extra flavor.

Assembly

  • On the bottom half of the toasted bagel, place a slice of cheddar cheese. The heat from the scrambled eggs will help melt the cheese.
  • Spoon the cooked eggs onto the cheese-covered bagel half evenly.
  • Layer the crispy bacon slices over the eggs, crumbling them slightly if needed.
  • Sprinkle chopped chives over the bacon for added flavor and garnish.
  • Top with the remaining bagel half and press down gently.
  • Serve immediately while warm and melty.

Notes

You can customize with different meats, veggies, or cheeses. Works well for busy mornings or leisurely brunches. Wrap leftovers tightly for storage.
