Ingredients

Main Ingredients

  • 3 cups shredded cooked chicken
  • 1 cup buffalo sauce
  • 1 cup ranch dressing
  • 2 cups cooked rice
  • 1 cup shredded cheddar cheese
  • 1 cup diced celery
  • 1 cup diced green onions
  • ½ cup blue cheese crumbles optional

Instructions

Preparation

  • Start by gathering all your ingredients. Make sure your cooked chicken is shredded, and your rice is prepared beforehand. Chopping the celery and green onions will also save you time.
  • In a large bowl, combine the shredded chicken with the buffalo sauce and ranch dressing. Mix thoroughly until the chicken is well-coated.
  • Fold in the cooked rice, celery, and green onions to create the flavorful base of your casserole.

Cooking

  • Preheat your oven to 350°F (175°C). Transfer the chicken mixture into a greased baking dish, spreading it evenly across the bottom.
  • Sprinkle the shredded cheddar cheese generously over the top. If you're a fan of blue cheese, add that crumbled goodness on top.
  • Place the baking dish in the oven and bake for 25-30 minutes until the cheese is melted and bubbly, and the edges of the casserole are slightly browned.
  • Once out of the oven, let the casserole cool for about 5 minutes before serving.

Serving

  • Scoop generous portions into bowls and serve warm. Garnish with more diced green onions or fresh herbs for added color and flavor.

Notes

To store leftovers, let the casserole cool completely before transferring it to an airtight container. It can be kept in the refrigerator for up to 3-4 days, or frozen for up to 3 months.
