Ingredients
  

For the Potatoes

  • 8 pieces Russet potatoes, peeled and diced into ½-inch cubes
  • 2 tablespoons extra virgin olive oil
  • 1 packet dry ranch seasoning mix (2 tablespoons)
  • 2 teaspoons ground black pepper

For the Chicken and Toppings

  • 2 pounds boneless, skinless chicken breasts, cut into ½-inch pieces
  • ¼ cup buffalo sauce
  • 1 cup mild cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 8-10 slices thick-cut bacon, cooked and crumbled

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash your vegetables and cut them as described in the ingredient list.

Prepare the Potatoes

  • In a large bowl, mix the diced potatoes with olive oil, ranch seasoning, and black pepper until evenly coated.

Roast the Potatoes

  • Spread the seasoned potatoes evenly on a lined sheet pan and roast for 25-30 minutes, tossing halfway through.

Cook the Chicken

  • In a large skillet, cook the diced chicken over medium heat, adding remaining black pepper and a splash of buffalo sauce, stirring until cooked through (7-10 minutes).

  • In a separate bowl, combine cooked chicken with remaining buffalo sauce, crumbled bacon, and both types of cheese. Mix thoroughly.

Combine with Potatoes

  • Spread the chicken and cheese mixture evenly over the roasted potatoes.

Bake Again

  • Return the pan to the oven and bake for an additional 15-20 minutes or until cheese is melted and bubbly.

Ready to Serve

  • Let it cool for a few minutes, then garnish with chopped green onions and serve with sour cream and extra buffalo sauce.
