  • 1.5 cups shredded chicken rotisserie chicken works wonderfully
  • 6 pieces tortillas try Siete Almond Flour for a gluten-free option
  • 0.5 cups buffalo sauce
  • 0.25 cups plain Greek yogurt
  • 2 tablespoons green onion, chopped
  • 0.25 cups red onion, finely diced
  • 0.33 cups shredded cheddar cheese
  • 0.5 teaspoons garlic powder
  • 0.5 teaspoons sea salt

Preparation

  • Ensure your workspace is clean and organized. Gather all your ingredients and equipment.
  • In a large bowl, combine the shredded chicken, shredded cheddar cheese, chopped green onion, diced red onion, buffalo sauce, Greek yogurt, garlic powder, and sea salt. Mix until evenly distributed.
  • Heat the tortillas in the microwave for about 10 seconds to make them pliable.

Cooking

  • Take one tortilla, spoon a generous serving of the filling on one side, and roll it tightly.
  • In a skillet over medium heat, add oil. Once hot, place the rolled taquitos seam-side down in the skillet. Cook for 3-4 minutes on each side until golden brown and crispy.
  • Transfer cooked taquitos to a plate lined with paper towels to absorb excess oil, and cover with foil to keep warm.

Serving

  • Top with additional green onions before serving. Best served hot and crispy.

Notes

For a vegetarian version, swap chicken for shredded jackfruit or cooked lentils. These taquitos can also be frozen for longer storage.
