Ingredients
  

Butter Poached Lobster

  • 4 lobster tails shells cut lengthwise
  • 1 cup unsalted butter cut into cubes
  • 2 cloves garlic lightly crushed
  • 2 sprigs fresh thyme
  • 1 sprig fresh rosemary optional
  • 1 tbsp lemon juice fresh
  • salt to taste
  • black pepper to taste

Instructions
 

  • Use kitchen shears to cut the lobster shells down the center and gently loosen the meat.
  • In a saucepan over very low heat, add butter and allow it to melt slowly without bubbling.
  • Add garlic, thyme, and rosemary to the melted butter and let infuse for 2–3 minutes.
  • Submerge lobster tails in the butter, ensuring they are fully covered. Poach gently for 8–10 minutes until opaque and tender.
  • Remove lobster tails with a slotted spoon. Season with salt, black pepper, and lemon juice.
  • Serve immediately with extra butter sauce spooned over the top.

Notes

Keep the butter temperature low — it should never simmer. Serve with crusty bread, asparagus, or mashed potatoes for a complete meal.
