Ingredients
  

Salad Base

  • 4 cups shredded cabbage Use fresh, crisp cabbage for best texture.
  • ¼ cup chopped fresh parsley Can substitute with cilantro or green onions.

Dressing

  • ¼ cup Dijon mustard For milder flavor, substitute with yellow mustard.
  • 2 limes juiced Freshly squeezed lime juice enhances flavor.
  • 1 tablespoon olive oil Adds richness to the dressing.
  • ½ teaspoon salt Adjust to taste.
  • ¼ teaspoon black pepper Freshly ground black pepper is recommended.

Preparation

  • Wash the cabbage thoroughly. Remove any wilted outer leaves and slice into thin shreds.
  • Chop the parsley finely and set aside.

Combine Ingredients

  • In a large mixing bowl, combine the shredded cabbage and chopped parsley. Toss gently until well mixed.

Make the Dressing

  • In a small bowl, whisk together the Dijon mustard, lime juice, olive oil, salt, and black pepper until well blended.

Assemble

  • Pour the dressing over the cabbage mixture and toss thoroughly until the cabbage is evenly coated.
  • Let the salad sit for about 10 minutes to allow flavors to meld.
  • Just before serving, give it a final toss and serve chilled or at room temperature.

Optional Garnish

  • Garnish with additional chopped parsley or lime wedges if desired.

Notes

Best served fresh, can be stored in an airtight container in the fridge for 2-3 days. Avoid freezing as the texture of cabbage doesn't hold well.
