  • 8 oz linguine pasta Any shape of pasta can be used.
  • 1 lb chicken breast, sliced Use boneless, skinless chicken breast.
  • 2 tbsp Cajun seasoning Adjust amount for desired spice level.
  • 1 tbsp olive oil For cooking the chicken.
  • 1 cup heavy cream Can substitute with coconut cream for a dairy-free option.
  • ½ cup grated Parmesan cheese Use fresh for the best flavor.
  • ¼ cup chopped parsley For garnish.
  • Salt and pepper to taste

Preparation

  • Gather all your ingredients. Measure out 8 oz of linguine pasta, slice the chicken breast into bite-sized pieces, and chop 1/4 cup of fresh parsley.

Cooking the Pasta

  • In a large pot, bring salted water to a boil. Once boiling, add the linguine pasta and cook according to the package instructions, approximately 8-10 minutes, until al dente.

Coating the Chicken

  • In a mixing bowl, drizzle the sliced chicken with 2 tbsp of Cajun seasoning and toss to coat evenly.

Cooking the Chicken

  • In a large skillet, heat 1 tbsp of olive oil over medium heat. Add the seasoned chicken pieces and cook for 5-7 minutes, or until browned and cooked through, reaching an internal temperature of 165°F.

Making the Sauce

  • Reduce heat to low and pour in 1 cup of heavy cream. Stir gently and allow it to simmer for 2-3 minutes, until slightly thickened.
  • Add in 1/2 cup of grated Parmesan cheese, stirring until fully melted and the sauce is creamy. Season with salt and pepper to taste.

Combining Pasta and Sauce

  • Drain the linguine, reserving a little pasta water. Add the linguine to the skillet with the chicken and sauce, tossing to combine. If the sauce is too thick, add reserved pasta water to reach desired consistency.

Serving

  • Garnish with chopped parsley and serve immediately.

Notes

For gluten-free, substitute gluten-free pasta. Consider marinating the chicken in Cajun seasoning for extra flavor depth.
