Ingredients

Main ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 8 oz pasta (such as penne or fettuccine)
  • 1 tablespoon Cajun seasoning
  • 1 piece bell pepper (red or green), sliced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Olive oil
  • Parmesan cheese for serving

Instructions

Preparation

  • Gather all your ingredients for Cajun Chicken Pasta. Season the chicken breasts with Cajun seasoning, salt, and pepper. Prepare your veggies by slicing the bell pepper, chopping the onion, and mincing the garlic.

Cooking the Pasta

  • In a large pot, bring salted water to a boil and add your pasta. Cook according to package instructions until al dente. Once done, drain the pasta and set it aside, reserving a bit of the pasta water for later if needed.

Cooking the Chicken

  • In a large skillet over medium heat, add a splash of olive oil. Carefully place the seasoned chicken breasts in the skillet and cook for about 6-7 minutes on each side until golden brown and cooked through (internal temperature of 165°F). Remove from the skillet and let rest before slicing.

Sautéing the Vegetables

  • Using the same skillet, add sliced bell peppers and chopped onion. Sauté over medium heat for about 3-4 minutes until they begin to soften.

Adding Garlic

  • Add minced garlic to the skillet and cook for an additional minute, stirring constantly to avoid burning.

Making the Sauce

  • Pour in the chicken broth and heavy cream. Stir well to combine and let it simmer for about 2-3 minutes until slightly thickened.

Combining Pasta and Chicken

  • Add the cooked pasta and sliced chicken back into the skillet. Toss everything together gently, adjusting with reserved pasta water if needed.

Final Seasoning

  • Taste the dish and adjust seasoning with salt, pepper, or more Cajun seasoning as needed.

Serving

  • Remove from heat, serve hot, topped with freshly grated Parmesan cheese.

Enjoy!

  • Gather around the table and enjoy your homemade Cajun Chicken Pasta.

Notes

To store properly, let the dish cool, then refrigerate for up to 3-4 days or freeze for up to three months. Reheat in a skillet, adding chicken broth or cream if needed.
