  • 1 lb smoked sausage, sliced
  • 1 cup long-grain rice
  • 1 cup bell peppers (any colors), chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Preparation

  • Gather all your ingredients. Slice the smoked sausage and chop the onion, garlic, and bell peppers.

Cooking Base

  • In a large skillet, heat the olive oil over medium heat. Once it shimmers, add the sliced smoked sausage. Sauté until browned, about 5-7 minutes, then remove and set aside.

Sautéing Aromatics

  • In the same skillet, add the diced onion and minced garlic. Stir frequently until softened and fragrant, roughly 2-3 minutes.

Vegetables

  • Add chopped bell peppers to the skillet and cook for 3-4 minutes until softened.

Rice Preparation

  • Stir in the long-grain rice with the sautéed vegetables and mix in the Cajun seasoning, cooking for 1-2 minutes.

Adding Chicken Broth

  • Pour in the chicken broth and add salt and pepper to taste. Bring the mixture to a boil.

Simmering Rice

  • Reduce heat, cover the skillet, and let it simmer for about 20 minutes or until rice is cooked and liquid is absorbed.

Final Preparation

  • Stir in the reserved sausage and heat for 2-3 minutes.

Serving

Notes

For a vegetarian version, substitute smoked sausage with plant-based sausage and use vegetable broth. Adjust the spices according to your heat preference.
