Caramelized Banana Cheesecake

Ingredients
  

  • 16 oz cream cheese softened to room temperature
  • 1 cup granulated sugar
  • ¼ cup all-purpose flour
  • 4 eggs eggs
  • 1 tsp vanilla extract
  • 3 bananas peeled and used for caramelizing with brown sugar
  • ½ cup brown sugar for banana caramelization
  • honey or maple syrup optional, to help caramelize

Instructions
 

  • Preheat oven and prepare your springform pan (grease or line as needed).
  • In a large bowl, beat softened cream cheese until smooth. Add granulated sugar and flour, and continue mixing until well combined.
  • Add eggs one at a time, beating between additions until mixture is smooth. Stir in vanilla extract.
  • Pour the cream cheese batter into the prepared pan.
  • Bake the cheesecake until set (center should be slightly jiggly). Remove and allow to cool (often a few hours or overnight).
  • While cheesecake cools, slice bananas. In a skillet, combine brown sugar, optional honey or maple syrup, and a pinch of cinnamon. Cook until bubbling, add banana slices and caramelize on each side (~2–3 minutes per side) until golden.
  • Arrange the caramelized banana slices over the top of the cooled cheesecake. Chill further if needed before serving.

Notes

Use very ripe bananas for deeper caramel flavor. Be careful not to overbake the cheesecake to avoid cracks. You can also drizzle extra caramel sauce over top.
