  • 2 large eggs Can be replaced with flax eggs for vegan option
  • 1 teaspoon Italian seasoning Adds flavor to the mix
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt Low-sodium options available
  • ¼ teaspoon black pepper

Preparation

  • Start by gathering all your ingredients. Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the almond flour, garlic powder, salt, black pepper, and Italian seasoning.
  • Add the grated mozzarella cheese and cooked ground beef to the dry ingredients. Mix well.
  • Crack the two large eggs into the mixture. Stir until well combined.
  • Add the pepperoni slices into the mix and gently fold them in.
  • Lightly grease a muffin tin with cooking spray or oil.
  • Fill each muffin cup with the batter, keeping it about 3/4 full.

Baking

  • Bake in the preheated oven for 20–25 minutes, until golden brown on top.
  • Let the muffins cool for a few minutes before removing from the tin.
  • Serve warm and enjoy!

Notes

Store leftovers in an airtight container in the fridge for about 3 days. They can also be frozen for up to a month.
