Main Ingredients

  • 2 cups grated carrots Use fresh carrots for the best flavor.
  • 1 cup raisins
  • 2 units oranges, segmented Make sure to remove all pith.
  • ¼ cup chopped walnuts Can be substituted with sunflower seeds for nut-free option.

Dressing Ingredients

  • ¼ cup mayonnaise Can substitute with Greek yogurt for a healthier option.
  • 1 tablespoon honey For vegan version, replace with maple syrup.
  • 1 tablespoon lemon juice Freshly squeezed is recommended.

Instructions
 

Preparation

  • Grate the carrots and place them in a large mixing bowl.
  • Add the raisins and segmented oranges to the bowl with the grated carrots.
  • Chop the walnuts and sprinkle them over the carrot mixture.

Dressing

  • In a separate bowl, combine the mayonnaise, honey, and lemon juice until smooth.

Combine and Chill

  • Pour the dressing over the carrot, raisin, and orange mixture, and toss well to ensure everything is evenly coated.
  • Cover the bowl with plastic wrap and place it in the refrigerator for at least 30 minutes.
  • Taste the salad before serving and adjust sweetness or tartness by adding more honey or lemon juice, if needed.

Serve

  • Once chilled, give the salad a final toss and transfer it to a serving dish.

Notes

Best served fresh, but can be stored in an airtight container in the refrigerator for up to three days. Reheating is generally not necessary.
