Ingredients

  • 1 pound ground beef
  • 1 large yellow onion, finely diced (about 1 ½ cups)
  • 1 teaspoon garlic, minced
  • 4 cups beef broth (32 ounces / 960 g)
  • 2 pounds Yukon Gold potatoes, peeled and diced (about 4 cups diced potatoes)
  • 1 teaspoon paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper (to taste)
  • 1 ½ cups mild cheddar cheese, shredded (plus more for garnish)
  • 1 cup heavy whipping cream
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • to taste Parsley, chopped for garnish

Instructions
 

Preparation

  • Dice the onions.
  • Mince the garlic.
  • Peel, wash, and dice the potatoes.
  • Grate the cheddar cheese if you haven’t done so already.

Cooking

  • Heat a large pot or Dutch oven over medium heat. Add the ground beef and diced onions.
  • Cook for about 8–10 minutes, breaking apart the beef until fully cooked and the onions are softened. Drain excess grease.
  • Add the minced garlic and sauté for another minute until fragrant.
  • Stir in the beef broth, diced potatoes, paprika, kosher salt, and black pepper. Bring to a boil.
  • Reduce the heat to medium-low and let it simmer for about 15–20 minutes.
  • Check the potatoes for tenderness; they should be fork-tender.
  • Gradually add the shredded cheddar cheese, stirring continuously until melted.
  • Pour in the heavy cream and mix well. Heat for another 3–5 minutes, stirring occasionally.
  • In a small bowl, mix the cornstarch and water to create a slurry. Slowly add it to the soup while stirring gently.
  • Allow to simmer for an additional 2–3 minutes until the soup thickens.
  • Remove from heat and garnish with chopped parsley and extra cheese before serving.

  • Serve hot in your favorite bowl and enjoy the heartiness of this delicious meal!

Notes

For storage, refrigerate in an airtight container for up to 3-4 days, or freeze for up to 3 months. Reheat slowly on low heat, adding broth if necessary to thin out.
