Cooking

  • Heat the olive oil in a pan over medium heat. Once hot, add the minced garlic and sauté for about a minute until fragrant but not burnt.
  • Stir in the shredded chicken, seasoning it with salt and pepper. Mix well and ensure it’s heated through, which should take about 3-4 minutes.
  • Remove the pan from heat and stir in the shredded cheese. The residual heat will melt the cheese, creating a creamy mixture.

Assembly

  • Lay out your lettuce leaves or low-carb wraps on a plate. Carefully spoon a portion of the cheesy chicken mixture onto one side of the wrap.
  • Top your mixture with any optional ingredients you enjoy, such as diced tomatoes or avocado for added flavor and freshness.
  • Fold the wrap tightly around the chicken mixture. If using lettuce, you may need to secure it with a toothpick if it doesn’t hold on its own.

Notes

Store wraps wrapped in plastic wrap or foil in an airtight container in the refrigerator for up to three days. Reheat in the microwave or stovetop. For freezing, it's best to freeze the chicken mixture separately.
