  • 1 lb lean ground beef Can substitute with ground turkey or chicken.
  • 2 cups elbow macaroni Substitute with whole grain or gluten-free pasta.
  • 2 cups shredded cheddar cheese Can use mozzarella or pepper jack for different flavors.
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 14.5 oz can diced tomatoes (with juice) Fire-roasted diced tomatoes can be used for extra flavor.
  • 1 cup beef broth Vegetable broth can be used for a vegetarian version.
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian herbs

Preparation

  • Clear your kitchen counter and gather all your ingredients and utensils.
  • Preheat your oven to 350°F (175°C).

Cooking

  • In a large skillet over medium heat, cook the ground beef, breaking it apart with a spatula until it browns evenly, about 5-7 minutes. Drain any excess grease.
  • Add the diced onion to the cooked beef and sauté until the onions are soft, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  • Stir in the uncooked elbow macaroni, diced tomatoes (with their juice), and beef broth. Mix evenly and bring to a gentle boil.
  • Sprinkle in the salt, black pepper, and Italian herbs. Stir well and reduce heat to low. Let it simmer for about 5 minutes.
  • Fold in half of the shredded cheese until melted. Transfer the beef and pasta mixture into an oven-safe dish, spread it evenly, and top with the remaining shredded cheese.
  • Bake for 20-25 minutes, or until the cheese is bubbly and golden brown on top.
  • Let the casserole sit for a few minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 3 months. Ensure to reheat carefully to avoid overcooking.
