  • 1 cup shredded cheese Cheddar or your choice.
  • ½ cup diced vegetables Bell peppers, spinach, or onions.

Preparation

  • Start by gathering all of your ingredients. Dice any vegetables you plan to use.
  • Preheat your oven to 350°F (175°C).
  • Whisk together the large eggs and cottage cheese until smooth.
  • Stir in your choice of shredded cheese.
  • Add diced vegetables and mix until evenly distributed.
  • Season the mixture with salt and pepper to taste.
  • Grease a muffin tin with cooking spray or oil.
  • Pour the mixture into the muffin cups, filling them about 3/4 full.
  • Bake for 20-25 minutes until set and golden brown on top.
  • Allow to cool slightly before removing them from the muffin tin.

Notes

Avoid overfilling the muffin cups to prevent spills. You can add herbs or spices for extra flavor.
