Ingredients
  

For the potatoes

  • 2 pounds russet potatoes, peeled and small diced approximately 900 g
  • 3-4 tablespoons oil for tossing the potatoes
  • 1.5 teaspoons salt to taste
  • 0.5 teaspoon pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

For the meat

  • 1 pound ground beef approximately 450 g
  • 1 packet taco seasoning prepared according to packet instructions
  • Water as directed on taco seasoning packet

For assembly

  • 8 ounces Mexican shredded cheese approximately 225 g
  • Optional toppings: pico de gallo, guacamole, sour cream add as desired

Instructions
 

Preparation

  • Peel and small dice the russet potatoes for even cooking.
  • Measure out the oil, seasonings, and prepare the taco seasoning packet with the necessary water.

Cooking Potatoes

  • In a large bowl, toss the diced potatoes with oil, salt, pepper, garlic powder, and onion powder until well coated.
  • Preheat the air fryer to 400°F (200°C). Place the seasoned potatoes in the basket and air fry for 18-20 minutes, shaking the basket 2-3 times during cooking.

Cooking Meat

  • While the potatoes are cooking, brown the ground beef in a skillet over medium heat.
  • Drain any excess grease from the meat and add the taco seasoning along with the specified water.
  • Stir well to combine and let it simmer as per the taco seasoning packet instructions.

Assembly

  • Layer the crispy potatoes on a large serving plate.
  • Distribute the seasoned ground beef evenly over the layer of potatoes.
  • Sprinkle the shredded Mexican cheese generously over the beef layer.
  • Add your favorite toppings such as pico de gallo, guacamole, or sour cream.
  • Serve immediately while hot.

Notes

For additional flavor, consider adding black beans or corn to the beef mixture. Use good quality cheese for the best results.
