  • 2 cups mascarpone cheese
  • 1 cup heavy cream
  • ½ cup amaretto liqueur
  • ½ cup cherry juice
  • 1 cup fresh cherries, pitted and chopped
  • ¼ cup granulated sugar
  • 2 tablespoons cherry preserves
  • 1 teaspoon vanilla extract
  • 1 package ladyfingers
  • ¼ cup cocoa powder
  • ¼ cup dark chocolate, shaved or grated

Preparation

  • Start by gathering all of your ingredients in one spot.
  • In a large mixing bowl, combine mascarpone cheese and heavy cream. Beat on medium speed until smooth and fluffy, about 2-3 minutes.
  • Fold in amaretto liqueur, cherry juice, and vanilla extract. Beat again for 1-2 minutes until well combined.
  • In a separate bowl, mix granulated sugar and cherry preserves. Gradually add this to the mascarpone mixture and beat for an additional minute. Stir in chopped fresh cherries.
  • In a shallow dish, combine remaining amaretto liqueur and cherry juice for dipping ladyfingers.

Assembly

  • Quickly dip each ladyfinger into the liquid mixture and place a layer at the bottom of a baking dish.
  • Spread half of the mascarpone cherry mixture over the ladyfingers.
  • Repeat with another layer of dipped ladyfingers followed by the remaining mascarpone cherry mixture.

Chill and Serve

  • Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  • Before serving, dust the top with cocoa powder and sprinkle with shaved or grated dark chocolate.

Notes

Store leftover tiramisu in a covered container in the refrigerator for up to 3 days. For best results, thaw frozen tiramisu overnight in the refrigerator.
