  • 1 cup cherry preserves Ensure it's not overly sweet.
  • ½ cup hot water Used to dissolve the cherry preserves.
  • ½ cup amaretto liqueur For a non-alcoholic version, substitute with almond extract.
  • 1 cup mascarpone cheese Can be substituted with cream cheese.
  • 1 cup heavy cream It should be chilled for better whipping.
  • ¼ cup powdered sugar Can be substituted with a sugar substitute if needed.
  • 1 teaspoon vanilla extract
  • 1 cup fresh cherries, pitted and halved Adds freshness and flavor.
  • ¼ cup dark chocolate, grated For garnish.

Preparation

  • Gather all your ingredients on the countertop.
  • In a small bowl, combine the cherry preserves with the hot water. Stir until the preserves dissolve to create a syrup, then mix in the amaretto liqueur.
  • In a mixing bowl, add mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Beat on medium speed until smooth and thick (2-3 minutes).

Assembly

  • Dip each ladyfinger in the cherry-amaretto syrup, ensuring they are coated but not overly soggy.
  • Arrange half of the dipped ladyfinger cookies in the bottom of a 9x9 inch baking dish.
  • Spread half of the mascarpone mixture over the first layer of ladyfingers.
  • Distribute half of the fresh cherries over the mascarpone layer.
  • Repeat with the remaining ladyfinger cookies, mascarpone mixture, and finish with the second layer of cherries.
  • Sprinkle grated dark chocolate on top.

Chilling

  • Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Notes

Store leftovers in the refrigerator for up to 3 days; the dessert is best served chilled. Avoid oversoaking ladyfingers and ensure heavy cream is chilled before whipping.
