Preparation

  • Start by gathering all your ingredients. Softening the cream cheese ahead of time ensures a creamy mixture without lumps.
  • Preheat your oven to 190°C.
  • Line a muffin pan with cupcake liners. Place one vanilla wafer, flat side down, in each liner to create the base.

Making the Filling

  • In a mixing bowl, beat the softened cream cheese until it’s smooth.
  • Add the granulated sugar, eggs, lemon juice, and vanilla extract. Mix until the batter is light and fluffy.
  • Carefully pour the cheesecake mixture into each cupcake liner, filling about three-quarters full.

Baking

  • Place your muffin pan in the oven and bake for 15 to 20 minutes.
  • Remove the pan from the oven and allow the cupcake bites to cool completely in the pan.
  • Once cooled, take a spoonful of cherry pie filling and top each cheesecake cupcake.
