For the Egg Rolls

  • 8 pieces egg roll wrappers Look for gluten-free options if needed.
  • Oil for frying About 2 inches deep in the pan.

For Serving

Preparation

  • Gather all your ingredients and ensure the cream cheese is softened.
  • In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Blend until smooth and creamy.
  • Lay out your egg roll wrappers on a flat surface and keep a bowl of water nearby for sealing.

Filling the Egg Rolls

  • Spoon about 2 tablespoons of the cream cheese mixture into the center of each egg roll wrapper.
  • Top each filled wrapper with a spoonful of cherry pie filling.
  • Fold in the sides of the wrapper and roll tightly from the bottom to the top, using water to seal the edges.

Frying

  • Heat oil in a deep pan over medium heat, around 2 inches deep.
  • Carefully add the egg rolls a few at a time and fry for 3-4 minutes on each side until golden brown.
  • Remove and drain on paper towels to retain crispiness.

Serving

  • Serve the Cherry Cheesecake Egg Rolls warm, optionally with whipped cream on the side.

Notes

These egg rolls can be made ahead of time, storing the filling separately if desired. Frozen un-fried egg rolls can be cooked straight from the freezer.
