  • ¼ cup butter, melted Coconut oil can be used as a dairy-free substitute.
  • 1 unit egg For a vegan option, replace with 'flax egg'.
  • 1 teaspoon baking powder Ensure it's fresh for the muffins to rise.
  • ½ teaspoon vanilla extract
  • 1 cup fresh or canned cherries, pitted Use fresh for best flavor or well-drained canned cherries.

Preparation

  • Gather all your ingredients and tools. You'll need a mixing bowl, whisk, spatula, muffin tin, and paper liners.
  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the flour, sugar, and baking powder. Whisk until well incorporated.
  • In another bowl, whisk together milk, melted butter, egg, and vanilla extract until mixed well.
  • Slowly add the wet mixture to the dry ingredients and stir gently until just mixed. Be careful not to overmix.
  • Gently fold in the pitted cherries into the batter.
  • Line a muffin tin with paper cups and fill each cup about two-thirds full with batter.

Baking

  • Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the muffins cool in the tin for about 5 minutes before transferring to a wire rack to cool completely.

Serving

  • Serve the muffins warm. They can also be enjoyed fresh out of the oven or stored for several days.

Notes

Store in an airtight container for up to 3 days at room temperature, or freeze for up to 3 months. Use fresh cherries when in season for the best flavor. Avoid overmixing the batter to ensure fluffy muffins.
