Ingredients
  

Chicken & Potatoes

  • lb boneless skinless chicken (breasts or thighs)
  • 4 medium potatoes cubed, skin on or off

Seasonings & Extras

  • 1 tbsp olive oil
  • 1 tbsp minced garlic
  • tsp salt
  • tsp black pepper
  • 1 cup shredded mozzarella cheese for topping (optional)

Garnish (optional)

  • fresh parsley chopped

Instructions
 

  • Preheat oven to 425 °F (220 °C).
  • Dice potatoes into ~¾-inch cubes. Place them in a mixing bowl and toss with olive oil, minced garlic, salt, and pepper.
  • Spread the seasoned potato cubes evenly in a greased baking dish. Bake for about 15 minutes to begin warming them.
  • Remove dish from oven and nestle the chicken pieces among the partially baked potatoes. If desired, brush chicken with oil and season again.
  • Bake for another 20-25 minutes, until the chicken is cooked through and potatoes are tender.
  • Sprinkle the shredded mozzarella cheese over the top (if using), and return to the oven just long enough to melt it (a few minutes).
  • Remove from oven and garnish with fresh parsley before serving.

Notes

You can swap chicken thighs for breasts, adjust seasoning to taste, or skip cheese. Cooking times may vary depending on oven and size of cuts.
