For the Tacos

  • 2 cups cooked chicken, shredded
  • 8 small corn tortillas Gluten-free option
  • 1 cup chimichurri sauce
  • 1 cup diced tomatoes
  • ½ cup diced red onion Can use green onions for a milder flavor
  • 1 each avocado, sliced
  • 1 each lime, cut into wedges

Preparation

  • Start by gathering all your ingredients. Cook and shred your chicken if not done already. Wash and chop your tomatoes, red onion, and avocado, placing them in separate bowls to keep everything organized.
  • In a skillet over medium heat, warm the shredded chicken for about 3-5 minutes.
  • Warm the corn tortillas in the same skillet or a separate one until they are pliable, about 1-2 minutes per side.
  • Place a generous scoop of the warm shredded chicken in the middle of each tortilla.
  • Drizzle chimichurri sauce generously over the chicken.
  • Sprinkle a handful of diced tomatoes and red onion on top.
  • Finish with slices of fresh avocado.
  • Arrange the tacos on a serving platter and add lime wedges on the side.

Notes

Consider toasting the tortillas lightly before filling them. For more flavor, let the chimichurri sauce sit for at least 30 minutes before using.
