  • 200 g pasta any type
  • 150 g chicken breast diced
  • 100 g corn canned or frozen
  • 100 g bacon chopped
  • 2 tbsp olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • salt to taste
  • black pepper to taste
  • Parmesan cheese for serving

Instructions
 

  • Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve a little pasta water and drain.
  • Heat olive oil in a large skillet over medium heat. Add chopped bacon and cook until crispy. Remove bacon and set aside.
  • In the same skillet, sauté the diced onion for 3–4 minutes until translucent. Add garlic and cook for 1 minute.
  • Add diced chicken, season with salt and pepper, and cook for 6–8 minutes until golden and cooked through.
  • Stir in the corn and cook for 2–3 minutes until heated through.
  • Add the cooked pasta to the skillet and toss to combine. Add a splash of reserved pasta water if needed.
  • Stir in the crispy bacon, adjust seasoning, and serve hot topped with Parmesan cheese.

Notes

This dish is very versatile. You can add cream for a richer sauce, chili flakes for heat, or extra vegetables like bell peppers or spinach. Great for leftovers and meal prep.
