Preparation

  • Start by gathering all your ingredients to streamline the cooking process. Shred the cooked chicken, dice the onion, and mince the garlic.

Cooking

  • In a large pot, heat a bit of oil over medium heat. Add the diced onion and minced garlic, sautéing until soft and fragrant, about 3 to 5 minutes.
  • Add shredded chicken, enchilada sauce, black beans, corn, diced tomatoes, and chicken broth. Stir well to combine.
  • Sprinkle in cumin, chili powder, salt, and pepper to taste. Stir and bring to a simmer.
  • Allow the soup to simmer for about 15 minutes.
  • Stir in heavy cream and heat through for another few minutes.
  • Taste and adjust the seasoning if necessary.
  • Ladle the soup into bowls and garnish with tortilla chips, shredded cheese, sour cream, and fresh cilantro.
