  • 1 onion, sliced (yellow or red)
  • 2 tablespoons olive oil
  • 2 teaspoons fajita seasoning

  • 8 small tortillas Corn or flour, based on preference

Instructions
 

Preparation

  • Start by washing and slicing the chicken fillet into thin strips to ensure even cooking.
  • Slice the bell pepper and onion as well.

Cooking

  • In a large skillet, heat olive oil over medium heat.
  • Add the sliced chicken to the hot pan and cook until browned, about 5 to 7 minutes.
  • Add the sliced bell pepper and onion, stirring frequently until softened, about 4 to 5 minutes.
  • Sprinkle fajita seasoning and salt over the mixture, stirring well.
  • Cook for an additional 5 minutes on medium heat for flavors to combine.

Serving

  • Warm the tortillas in a separate pan over low heat.
  • Assemble by placing a generous amount of the chicken and veggie mixture in the center of each warmed tortilla.
  • Add your favorite toppings and serve immediately.

Notes
