Ingredients
  

Marinade & Chicken

  • 500 g chicken breast or thigh, boneless & skinless, cut into strips or cubes
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice (fresh)
  • 1 tbsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper

Creamy Feta Tzatziki

  • 1 cup Greek yogurt full-fat preferred
  • ½ cup feta cheese, crumbled
  • 1 cucumber (medium) cucumber, grated & drained seeded if desired
  • 1 clove garlic, minced (for tzatziki)
  • 1 tbsp lemon juice (for tzatziki)
  • salt & pepper, to taste (for tzatziki)

To Serve

  • 4 pita breads or flatbreads, warmed
  • lettuce, tomato, red onion, extra cucumber, herbs (optional)

Instructions
 

  • In a mixing bowl, whisk together olive oil, minced garlic, lemon juice, dried oregano, salt and pepper. Add the chicken pieces and toss to coat. Marinate at least 15–20 minutes (or up to 1 hour) in the refrigerator.
  • Meanwhile, prepare the creamy feta tzatziki: grate the cucumber, then squeeze or drain out excess water. In another bowl, combine Greek yogurt, crumbled feta, grated cucumber, minced garlic, and lemon juice. Season with salt and pepper. Chill until serving.
  • Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken (shaking off excess marinade) for about 4–6 minutes per side (or until fully cooked and nicely browned). Let rest a few minutes, then slice if needed.
  • Warm the pita breads briefly in oven or skillet so they are soft and pliable.
  • To assemble: spread or drizzle feta tzatziki on the pita, then add cooked chicken, lettuce, tomato, red onion, cucumber, fresh herbs or extra toppings as desired. Fold and serve immediately.

Notes

You can adjust the tanginess by varying the amount of lemon juice. For thinner tzatziki, stir in a little water or extra yogurt. Chicken thighs give more juiciness; breasts are leaner.
