  • 8 oz pasta of your choice (fettuccine or penne works well) Choose gluten-free pasta if necessary.
  • 2 pieces chicken breasts, sliced You can substitute with thighs for a juicier option.
  • 1 cup mushrooms, sliced (cremini or button) Mushrooms enhance flavor.
  • ½ cup Marsala wine Opt for good quality Marsala for best results.
  • 1 cup chicken broth Use vegetable broth for a vegetarian version.
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste
  • ¼ cup parsley, chopped Used for garnish.

Preparation

  • Gather all your ingredients. Slice the chicken breasts, mushrooms, and garlic. Measure out your Marsala wine and chicken broth.

Cooking Pasta

  • In a large pot, bring water to a boil and add a generous pinch of salt. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a little pasta water for later.

Cooking Chicken

  • In a large pan, heat the olive oil over medium heat. Add the sliced chicken and cook for about 5 minutes until browned on both sides. Season lightly with salt and pepper.

Adding Vegetables

  • Add the sliced mushrooms and minced garlic to the pan. Sauté for about 3-4 minutes until the mushrooms are tender.

Making Sauce

  • Carefully pour in the Marsala wine, scraping the brown bits off the bottom. Allow it to simmer for a couple of minutes until slightly reduced.
  • Add the chicken broth and bring the mixture to a gentle simmer for about 10 minutes.

Combining

  • Add the drained pasta to the pan and toss to combine. If the sauce is too thick, stir in reserved pasta water to adjust the consistency.

Final Touches

  • Taste and adjust seasoning with more salt and pepper if needed. Garnish with chopped parsley before serving.

Notes

To store leftovers, let them cool to room temperature, then place in an airtight container for up to 3 days. For freezing, use a freezer-safe container.
