  • 1 cup tomatoes, diced
  • ½ cup cucumber, sliced
  • ½ cup red onion, thinly sliced Can substitute with green onions.
  • ½ cup yogurt sauce Dairy-free options available.
  • 1 tablespoon olive oil
  • Salt and pepper to taste Adjust based on preference.

Preparation

  • Gather all your ingredients. Dice the cooked chicken and chop the vegetables into bite-sized pieces.
  • Heat the olive oil in a pan over medium heat. Add the diced chicken and season with salt and pepper. Cook until heated through, about 5 minutes, stirring occasionally.
  • Preheat your oven to 350°F (175°C). Place the pitas on a baking sheet and warm them in the oven for a few minutes until slightly soft and easy to fold.

Assembly

  • Once the pitas are warm, open one and layer in the chicken, followed by shredded lettuce, diced tomatoes, cucumbers, and red onions.
  • Drizzle yogurt sauce generously over the fillings in each pita.
  • Gently squeeze the sides of the pita together to close it.
  • Transfer the stuffed pitas to a serving platter and enjoy immediately.
