Preparation

  • Gather and prep all ingredients: chop the onion and garlic, and measure out the wine and broth.
  • In a large skillet, heat the olive oil over medium heat. Add chicken breasts, browning on both sides for about 5 minutes each.
  • Remove the browned chicken from the skillet and set aside on a plate.
  • In the same skillet, add the chopped onions and minced garlic. Sauté until soft and fragrant, about 3-4 minutes.
  • Pour in the Riesling wine and chicken broth, stirring well to combine and deglaze the pan.
  • Add thyme, salt, and pepper to the sauce. Taste and adjust seasoning as necessary.
  • Return the browned chicken breasts to the skillet, ensuring they are submerged in the sauce.
  • Cover the skillet and let it simmer on low heat for about 25 minutes, until the chicken is cooked through and tender.

Notes

Serve with creamy mashed potatoes, roasted vegetables, or a light salad. Can be prepared ahead of time. Store leftovers in an airtight container for up to three days in the refrigerator or freeze for longer storage.
