  • 2 cups orzo pasta Rice-shaped pasta
  • 1 pound chicken sausage, sliced Use your preferred flavor
  • 1 medium bell pepper, diced Any color you prefer
  • 1 medium zucchini, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth Vegetable broth can be used for a lighter version
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • to taste garnish Fresh parsley For garnish

Preparation

  • Gather all your ingredients. Slice the chicken sausage, chop the veggies, and mince the garlic.

Cooking

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and translucent, about 2-3 minutes.
  • Stir in the sliced chicken sausage and cook until browned, about 4-5 minutes.
  • Add the diced bell pepper and zucchini to the pot. Cook for an additional 5 minutes.
  • Pour in the chicken broth and bring the mixture to a boil.
  • Once boiling, stir in the orzo pasta. Reduce the heat to a simmer and cook for about 8-10 minutes.
  • Season with salt and pepper to taste, stirring well.
  • Remove from heat and let sit for a minute. Serve hot, garnished with parsley.

Notes

Great for meal prep and can be modified for various dietary needs. Serve with crusty bread or a side salad for a complete meal.
