Marinade Ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced Can use garlic powder as an alternative.
  • 2 teaspoons chili powder Adjust to desired spice level.
  • 1 teaspoon cumin

Preparation

  • Gather all ingredients on the counter.
  • In a mixing bowl, combine olive oil, minced garlic, chili powder, cumin, salt, and pepper. Add the chicken breasts and coat them thoroughly.
  • Marinate the chicken for at least 20 minutes in the refrigerator.

Cooking

  • Preheat the grill or a grill pan to medium-high heat.
  • Grill the marinated chicken for 6-7 minutes per side or until fully cooked.
  • Remove the chicken, let it rest, and then chop into bite-sized pieces.

Assembly

  • Warm the corn tortillas in a skillet for about 30 seconds on each side.
  • Assemble tacos by placing grilled chicken on each tortilla, topping with chopped onion, cilantro, and lime juice.
  • Serve immediately with additional lime wedges.

Notes

Store leftover chicken and toppings separately in airtight containers for up to 3 days. Warm tortillas before serving for best texture.
