  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup salsa
  • 1 packet taco seasoning
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup tortilla chips, crushed (optional) For added crunch
  • ½ cup sour cream (for serving)
  • Chopped cilantro (for garnish, optional)

Instructions
 

Preparation

  • Gather all your ingredients. Shred the cooked chicken in advance if you haven't already.
  • Rinse and drain the black beans and corn, and measure out the salsa and taco seasoning.

Cook the Base

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the shredded chicken, drained black beans, corn, salsa, and taco seasoning. Stir until well combined.

Assemble the Casserole

  • Grease a 9x13 inch baking dish with cooking spray or a thin layer of oil.
  • Spread the chicken mixture evenly in the dish.

Add the Cheese

  • Sprinkle the shredded cheese over the chicken mixture. Optionally, add crushed tortilla chips on top.

Bake

  • Place the casserole in the oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.

Cool and Serve

  • Remove the casserole from the oven and let cool for a few minutes.
  • Slice into squares and serve.
