Ingredients
  

For the marinade

  • 500 g chicken breast, cubed Use boneless, skinless chicken breast for best results.
  • 1 cup yogurt Greek yogurt can be used for a tangier flavor.
  • 2 tablespoons lemon juice Freshly squeezed lemon juice is preferred.
  • 2 tablespoons tikka masala spice mix Adjust according to spice preference.

For the sauce

  • 2 tablespoons oil Vegetable or olive oil can be used.
  • 1 large onion, chopped Chop finely for even cooking.
  • 2 cloves garlic, minced
  • 1 inch ginger, grated Fresh ginger enhances flavor.
  • 1 can (400g) crushed tomatoes Canned tomatoes work well for convenience.
  • 1 cup heavy cream Coconut milk can be used for a dairy-free option.
  • Salt to taste
  • Cilantro for garnish Fresh cilantro adds flavor and color.

Preparation

  • Gather all the ingredients. Cube the chicken and place it in a bowl. Add yogurt, lemon juice, and tikka masala spice mix. Combine well, ensuring the chicken is evenly coated with the marinade. Let it sit for at least one hour, or overnight if possible.
  • Heat oil in a large pan over medium heat. Once hot, add chopped onions. Sauté until the onions turn golden brown, about 7-10 minutes.
  • Add minced garlic and grated ginger to the pan. Cook for about 2 minutes, stirring frequently until fragrant.
  • Add the marinated chicken to the pan, spreading it out evenly. Sear for about 5-7 minutes until browned on all sides.
  • Stir in the crushed tomatoes. Mix thoroughly, cover, and simmer for about 10 minutes.
  • Reduce heat to low, pour in the heavy cream, and stir well. Cook for another 5 minutes, stirring occasionally.
  • Season with salt to taste, and garnish with fresh cilantro before serving.

Notes

For a healthier option, use Greek yogurt instead of regular yogurt. For vegan, swap chicken for tofu or chickpeas and use coconut milk.
