  • 1 teaspoon Italian seasoning Use fresh herbs like thyme or basil as alternatives.

Preparation

  • Clear your workspace and gather all your ingredients and tools (large pot, cutting board, measuring cups).
  • Chop your onions, carrots, and celery into small, even pieces.

Cooking

  • In a large pot over medium heat, add a splash of olive oil and sauté the chopped onions, carrots, and celery for about 5 to 7 minutes until they begin to soften.
  • Add the minced garlic and sauté for another minute until fragrant.
  • Pour in the chicken broth and stir to combine; bring to a gentle boil.
  • Once boiling, add the cheese tortellini and follow package instructions for cooking time (usually about 3-5 minutes).
  • After the tortellini is cooked al dente, stir in the shredded chicken.
  • Sprinkle in the Italian seasoning, and season with salt and pepper to taste.
  • Reduce heat to low and let the soup simmer for another 5-10 minutes.
  • To serve, ladle the soup into bowls and garnish with freshly chopped parsley.
