Base Ingredients

  • 1 tablespoon oil Use vegetable broth for oil-free option.
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated

Spices

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder Adjust for spice preference.
  • 1 teaspoon garam masala Essential for flavor.

Main Ingredients

  • 1.5 cups chopped tomatoes (or 1 can) Use fresh or canned.
  • 2 cups cooked chickpeas (or 1 can, drained and rinsed) Substitute with lentils if needed.
  • ½ cup water or vegetable broth Use broth for added flavor.
  • 1 tablespoon lemon juice Enhances dish brightness.
  • to taste salt Add at the end to avoid moisture loss.
  • Fresh cilantro for garnish (optional) Add for color and flavor.

Instructions
 

Preparation

  • Gather all ingredients. Chop the onion, mince the garlic, and grate the ginger.

Cooking

  • In a pan over medium heat, add the oil and sauté the chopped onions until golden brown (5-7 minutes).
  • Add minced garlic and grated ginger. Sauté for another 1-2 minutes until fragrant.
  • Stir in ground cumin, coriander, turmeric, and chili powder. Toast for about a minute.
  • Add chopped tomatoes and cook for 5-7 minutes until softened and saucy.
  • Stir in cooked chickpeas and water or broth. Simmer for 10-15 minutes until heated through.
  • Mix in garam masala and lemon juice, then season with salt to taste.
  • Garnish with fresh cilantro if desired and serve warm.

Notes

Store in an airtight container in the refrigerator for up to 4-5 days or freeze for up to three months.
