Ingredients
  

Main Ingredients

  • 1 lb ground beef Substitute with turkey or plant-based meat for a healthier option.
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • ¼ tsp cayenne (optional) Add for extra heat.
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • ½ cup water or beef broth Use vegetable broth for a lighter flavor.
  • 1 can (15 oz) kidney or black beans (optional), drained and rinsed Skip if avoiding beans.
  • to taste Salt and pepper
  • 1 tbsp olive oil

Preparation

  • Gather all your ingredients and tools. Chop your onion and mince your garlic ahead of time.

Cooking

  • In a large pot, heat 1 tablespoon of olive oil over medium heat.
  • Add diced onion and sauté until soft and translucent, about 4-5 minutes. Add minced garlic and sauté for another minute.
  • Increase the heat slightly and add the ground beef, breaking it apart with a spatula. Cook until browned, about 6-8 minutes.
  • Sprinkle in chili powder, cumin, smoked paprika, cayenne, salt, and pepper. Stir well and cook for about 1 minute.
  • Pour in the diced tomatoes and tomato sauce, stirring to combine.
  • Add 1/2 cup of water or beef broth and bring to a gentle simmer.
  • If adding beans, rinse and drain them, then stir them into the chili.
  • Reduce the heat to low and let the chili simmer uncovered for 20–30 minutes, stirring occasionally.
  • Before serving, taste the chili and adjust seasoning as necessary.

Notes

Chili tastes better the next day, so consider making it ahead of time. Store it in airtight containers.
