  • 1 cup Cooked Rice
  • 1 can Black Beans (rinsed and drained)
  • 1 cup Fresh Vegetables (such as lettuce, tomatoes, peppers, etc.)
  • ½ cup Chipotle Ranch Dressing
  • 4 large Tortillas
  • to taste Smoky Spices (such as cumin, paprika, garlic powder, etc.) Use a mix for flavor.

Preparation

  • Clear your kitchen counter and gather all your ingredients.
  • Sprinkle grilled chicken breasts generously with smoky spices and let rest.

Grilling

  • Grill the seasoned chicken breasts over medium heat for 6-8 minutes per side, until fully cooked.
  • Remove from heat, let rest for a few minutes, then slice into strips.

Assembly

  • Lay a tortilla flat and layer with 1/4 cup cooked rice, 1/4 cup black beans, a handful of fresh vegetables, and a few slices of grilled chicken.
  • Drizzle 1-2 tablespoons of chipotle ranch dressing over the fillings.
  • Roll the tortilla tightly, folding in the sides as you roll.
  • Optionally, grill the wrapped burrito for 2-3 minutes on each side until golden brown.
  • Slice the burrito in half diagonally and serve immediately.

Notes

Best served with drinks like iced tea or sparkling water, and tasty side options such as chips with guacamole or a fresh salad. Store leftovers in an airtight container for up to 3 days in the fridge or 3 months in the freezer.
