Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

Wet Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • ¾ cup granulated sugar
  • ¼ cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 very ripe bananas, mashed

Mix-Ins

  • 1 cup semi-sweet chocolate chips plus extra for topping, optional
  • ½ cup chopped walnuts or pecans optional

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and gather all ingredients and tools.
  • Grease and flour a 9x5 inch loaf pan, optionally lining it with parchment paper.
  • In a medium bowl, whisk together flour, baking soda, cinnamon, and salt.

Mixing

  • In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add eggs one at a time, ensuring each is well mixed, then stir in vanilla extract.
  • Mash the ripe bananas in a separate bowl until mostly smooth.
  • Gradually add the dry ingredients to the wet mixture alternating with the mashed bananas, mixing gently.
  • Fold in chocolate chips and nuts if using them.

Baking

  • Transfer the batter to the prepared loaf pan and sprinkle additional chocolate chips on top.
  • Bake in the preheated oven for 50-60 minutes, checking if a skewer comes out clean.
  • Let the bread cool in the pan for 10-15 minutes before transferring to a wire rack.

Notes

Store in an airtight container for 3-4 days at room temperature or freeze for up to 3 months. Thaw and reheat as needed for best taste.
