  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ¼ teaspoon salt

Cookie Dough Layer (Egg-Free)

  • ½ cup unsalted butter, softened
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour (heat-treated*) *Spread on baking sheet and bake at 350°F for 5-7 minutes.
  • ½ cup mini chocolate chips

Chocolate Topping

  • ½ cup semi-sweet chocolate chips
  • 1 tablespoon butter or cream (optional) For smooth drizzle

Instructions

Preparation

  • Gather all your ingredients to ensure a smooth cooking process. Preheat your oven to 350°F (175°C), and grease or line a mini muffin pan with liners for easy removal.

Cook the Base

  • In a large mixing bowl, whisk together the melted butter and granulated sugar until combined. Add the eggs and vanilla extract, stirring until the mixture is smooth. Sift in the cocoa powder, flour, and salt, mixing until just combined.

Fill the Muffin Pan

  • Using a small scoop, fill each muffin cavity about ⅔ full with the brownie mixture. Bake in the preheated oven for 15–18 minutes.

Cool Completely

  • Remove the brownies from the oven and let them cool in the muffin pan for about 5 minutes, then transfer them to a wire rack to cool completely.

Cream the Cookie Dough

  • While the brownie bites are cooling, prepare the cookie dough. In a separate bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy, about 2-3 minutes.

Mix in Wet Ingredients

  • Add the milk and vanilla extract to the creamed mixture. Mix until thoroughly combined, ensuring no lumps remain.

Incorporate the Flour and Chips

  • Gradually mix in the heat-treated flour until a soft dough forms, then gently fold in the mini chocolate chips.

Assemble the Bites

  • Once the brownie bites have cooled, use a small cookie scoop to place a dollop of cookie dough on top of each brownie.

Prepare the Chocolate Drizzle

  • Melt the semi-sweet chocolate chips in the microwave or over a double boiler, stirring until smooth. If desired, mix in the butter or cream.

Drizzle and Chill

  • Drizzle the melted chocolate over the cookie dough topped brownies, then chill in the fridge for about 20 minutes.

Notes

Store in an airtight container at room temperature for 1-2 days or refrigerate for up to a week. Microwave individual bites for 10-15 seconds to reheat.
