Ingredients
  

Cookie Dough

  • ½ cup unsalted butter softened
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup chocolate chips

Filling

  • 12 marshmallow Peeps

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the egg and vanilla extract and mix until well combined.
  • In another bowl, whisk together flour, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture.
  • Fold in the chocolate chips until evenly distributed.
  • Scoop a portion of cookie dough, flatten slightly, place a marshmallow Peep in the center, and cover with more dough to seal.
  • Place cookies on the prepared baking sheet and chill the dough for about 20 minutes.
  • Bake for 10–12 minutes until the edges are golden. Let cool slightly before serving.

Notes

Make sure the Peeps are fully covered with dough to prevent excessive melting. These cookies are best enjoyed warm when the marshmallow center is gooey.
