Ingredients
  

Dry Ingredients

  • 1.5 cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon

Wet Ingredients

  • ½ cup neutral oil such as canola or sunflower
  • ¾ cup brown sugar packed
  • 1 tsp vanilla extract
  • 1 flax egg or regular egg 1 tbsp flaxseed + 3 tbsp water if vegan
  • 1 cup grated zucchini squeezed of excess water
  • ¾ cup chocolate chips vegan or regular

Instructions
 

  • Preheat the oven to 350°F (175°C). Lightly grease or line a 9x9-inch baking pan with parchment paper.
  • In a large bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  • In a separate bowl, whisk oil, brown sugar, vanilla, and flax egg (or regular egg) until smooth.
  • Add the wet ingredients to the dry ingredients and stir until just combined. Fold in grated zucchini and chocolate chips.
  • Spread the batter evenly into the prepared pan. Bake for 22–26 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool completely before cutting into bars. Enjoy plain or with a drizzle of melted chocolate on top.

Notes

For extra texture, add 1/4 cup of chopped nuts. Store in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
