Preparation

  • Gather all your ingredients, ensuring the cream cheese is softened to room temperature for a smooth texture.

Making the Crust

  • Mix the chocolate cookie crumbs and melted butter in a bowl until combined. It should resemble wet sand.
  • Press the mixture firmly into the bottom of a springform pan to create an even crust.

Making the Cheesecake Filling

  • In a large mixing bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Add the sour cream and mix on low speed until just combined.

Melting the Chocolate Ganache

  • In a microwave-safe bowl, combine the semi-sweet chocolate chips and heavy cream. Heat in 30-second intervals, stirring until melted and smooth.
  • Allow it to cool slightly before adding it to the cheesecake mixture.

Combining and Baking

  • Gently fold the melted chocolate ganache into the cheesecake batter.
  • Pour the filling over the prepared crust and spread it evenly, ensuring no crust is showing.

Cooling and Serving

  • Let the cheesecake cool at room temperature for about 30 minutes, then refrigerate for at least 4 hours, or overnight, to fully set.

Notes
