Ingredients
  

For the cheesecake base

  • 1 cup unsalted butter, at room temperature
  • 1.5 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 0.5 cup sour cream
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cornstarch
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, melted
  • 1 cup light brown sugar, packed

  • 13 slices canned pineapple, drained Optional for a twist
  • 13 pieces maraschino cherries Optional for a twist

Preparation

  • Gather all your ingredients and preheat your oven to 350°F (175°C). Grease your mini round cake pan or muffin tin.

Mixing the Base

  • Cream together the room temperature butter and granulated sugar with an electric mixer until light and fluffy, about 3-4 minutes.
  • Add the eggs, vanilla extract, and sour cream to the mixture, blending well until fully integrated.
  • In a separate bowl, combine the flour, baking powder, cornstarch, and salt, then whisk together.
  • Gradually add the dry ingredients into the wet mixture, mixing until just combined.

Preparing the Cheesecake Layers

  • In another bowl, blend the melted butter and light brown sugar into a smooth mixture.
  • Spoon about 1 tablespoon of the brown sugar mixture into each cavity of the prepared pan.
  • Place a drained canned pineapple slice over the brown sugar glaze, followed by a maraschino cherry in the center of each pineapple ring.
  • Using a 3-tablespoon scoop, portion cookie dough over each fruit-topped cavity and gently flatten with an offset spatula.

Baking

  • Place the pan in the preheated oven and bake for about 25 minutes or until cookies are golden brown around the edges.
  • Allow the cookies to cool for 10 minutes in the pan, then gently invert onto wax paper.

Notes

For a dairy-free version, substitute vegan butter and dairy-free sour cream. Gluten-free flour can replace the all-purpose flour. For added flavor, consider adding orange zest.
