Preparation

  • Gather all your ingredients. Preheat your oven to 325°F (165°C).

Cook the Base

  • In a mixing bowl, combine the chocolate cookie crumbs and melted butter. Mix until fully coated, then press into the bottom of a springform pan. Bake for about 10 minutes and set aside to cool.

Beat the Cream Cheese Mixture

  • In a larger bowl, beat the softened cream cheese, sugar, and vanilla extract until well combined and smooth, about 3-4 minutes at medium speed.

Add the Eggs

  • One by one, add in the eggs while mixing on low speed, ensuring that each egg is fully incorporated before adding the next.

Stir in Sour Cream and Chocolate

  • Add the sour cream and melted dark chocolate, stirring carefully until fully incorporated.

Assemble the Cheesecake

  • Pour the cheesecake mixture over the cooled crust in the springform pan and smooth the top.

Bake to Perfection

  • Bake in the oven for 55-60 minutes until the center is slightly jiggly but mostly set.

Cooling and Refrigeration

  • Let the cheesecake cool in the oven for an hour, then refrigerate for at least 4 hours or overnight.

Top with Fresh Strawberries

  • Before serving, slice the fresh strawberries and arrange them artfully on top of the cheesecake.

Notes

Store in the refrigerator covered with plastic wrap to prevent odors and keep fresh for 5-7 days. Can be frozen for up to three months.
