Ingredients
  

Crust

  • 2 cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted

Filling

  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract

Swirl

  • ½ cup melted dark chocolate
  • ½ cup strawberry puree or strawberry jam for swirl

Instructions
 

  • Preheat your oven to 325 °F (160 °C).
  • Mix the chocolate cookie crumbs and melted butter, press into the bottom of the springform pan to form the crust.
  • In a large bowl, beat the cream cheese and sugar together until smooth. Add eggs one at a time, then stir in vanilla extract.
  • Divide the filling into two bowls. Stir the melted dark chocolate into one bowl, and the strawberry puree or jam into the other bowl.
  • Alternate spoonfuls of the chocolate batter and strawberry batter onto the crust, then use a toothpick or skewer to swirl them gently together for a marbled effect.
  • Bake in the preheated oven for about 50 minutes until the center is set but still slightly jiggly. Then turn off the oven and leave the cheesecake inside with the door ajar for 1 hour.
  • Chill in the refrigerator for at least 4 hours (or overnight) before serving.

Notes

Feel free to garnish with fresh strawberries or chocolate shavings before serving.
