Instructions
 

Preparation

  • Gather all your ingredients and preheat your oven to 350°F (175°C).

Mix Dry Ingredients

  • In a bowl, combine the flour, sugar, baking powder, and salt.

Whisk Wet Ingredients

  • In a separate bowl, whisk the eggs, vanilla extract, and almond extract.

Combine Mixtures

  • Gradually add the wet mixture to the dry mixture and mix until just combined.

Fold in Almonds

  • Gently fold in the chopped almonds into the dough.

Shape the Logs

  • Divide the dough in half and shape each half into a log, about 12 inches long and 3 inches wide.

Bake the Logs

  • Place the logs in the preheated oven and bake for 25-30 minutes.

Cool and Slice

  • Remove the logs from the oven and let them cool for about 10 minutes, then slice into 1-inch pieces.

Second Bake

  • Place sliced biscotti back on the baking sheet and bake for an additional 10-15 minutes until golden.

Cool Completely

  • Allow the biscotti to cool completely on a wire rack.

Notes

Store in an airtight container at room temperature for up to two weeks. Biscotti can be frozen for up to three months.
