  • 8 large large eggs
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 lb sausage or ham, cooked and crumbled
  • 4 cups bread (cubed) or hash browns
  • 1 cup milk
  • to taste Salt and pepper

  • diced veggies (like bell peppers, onions, or spinach)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, whisk together the eggs and milk. Season with salt and pepper.
  • Grease an appropriate baking dish lightly.

Layering

  • Layer the cubed bread or hash browns across the bottom of the greased baking dish.
  • Sprinkle the crumbled sausage or ham over the bread or hash browns.
  • Sprinkle the shredded cheese on top of the sausage or ham layer.
  • Pour the egg mixture evenly over the layered ingredients.
  • If using, sprinkle diced veggies on top of the egg mixture.

Baking

  • Cover the dish tightly and refrigerate overnight or bake immediately.
  • Bake for 30-35 minutes until set and golden on top.

Serving

  • Let the casserole cool for a few minutes before slicing and serving.

Notes

Store leftovers in the fridge for 3-5 days or freeze for up to 2-3 months. Reheat at 350°F covered with foil.
